People mostly used raw eggs initially, but now they prefer the powder despite the eggs because of different purposes. But we’ll use here the pasteurized eggs to make them safe for use. You can even pasteurize them at home by using other methods and can buy them from the market.
So, firstly we’ll share here with you about how to pasteurize egg white as we are using them here;
- Combine the eggs with sugar. Use two tablespoons of sugar for one egg.
- Now boil the water in a pan and add the mixture into it.
- Cook them until it reaches 160°F.
So, here it’s ready, you have to use it immediately for whatever purpose you want. But as we’ll use it for royal icing, let’s discuss it.
If you want to make a pure white color of royal icing, keep the following things in mind;
- It would help if you had to use a clear vanilla extract.
- Use conventional powdered sugar as it is white and doesn’t have any impurities.
- And to give it a bright white color, you can even use white food coloring.
- Other than white, you can give other colors by using different food coloring gels, as gels are better than liquid, but you can use the liquid.

- Take a pan, add eggs and vanilla extract, and mix until the bubbles form.
- Now add sugar and cook until it becomes like a thick mixture.
- So, icing is ready; now, you can add different food colors to it.
- Now take a piping bag, whatever size you want to use.
- Use a glass to fill the piping bag.
- Now you can make Different designs on cookies and cakes and decorate them on top with other things.
